Savory Pumpkin Rosemary Hummus

A few days ago Ashley tweeted a link to her dessert like pumpkin hummus and my jaw dropped. I like snacking on veggies while I’m working. I also happen to try and infuse pumpkin into absolutely everything I eat during the fall season. So why on earth hadn’t I heard about pumpkin hummus?! Long story short, Ashley’s recipe looked (and still looks) fantastic, but I didn’t have the cashews to make cashew butter and I really wanted to do her recipe justice by making it the way it was intended instead of doing my usual substitute-like-crazy. But my desire for hummus with my lunch was too overwhelming, and I just couldn’t wait. So I decided I’d hold off on making the sweet dessert like hummus and whip up a savory one and see how it turned out. It was delicious! Tom loves it and we’ve already eaten ourselves completely out of veggies as a result. (But I’ve been putting it on sammiches as a spread and YUM!) So thanks to Ashley for showing me how to include pumpkin into yet another avenue of my life. (And as soon as Tom and I finish off this jar of hummus, we’ll be giving her sweet-tooth alternative a try!)

What You Need

1 can chickpeas, rinsed and drained
1/2 cup pumpkin puree
3 Tbsp lemon juice
2 Tbsp tahini
1 Tbsp dried rosemary
1 1/2 tsp minced garlic (equal to 3 cloves)
3/4 tsp salt
2 tablespoons olive oil

What You Do

Throw everything into a food processor/blender and blend until smooth. =)

    Sounds really good and seasonal. I wonder how butternut squash would work.

    I devour pumpkin like an animal during the fall too. I’m usually not a fan of hummus, but I’m toying with the idea of trying out this particular recipe now. Have you tried putting pumpkin puree into fruit smoothies? It’s pretty delicious!

    I saw you guys tweeting about this and got mega curious! So glad I didn’t have to wait long to see it on the blog. I admit, I don’t really eat a whole lot of pumpkin anything, but in general I’m a huge HUGE squash fan. I’m gonna go out on a limb and give this a try.

    Also, I’m lovin’ the redesign! I’ve been meaning to incorporate a footer to my page, too – ever since I knocked out the sidebar I’ve been endlessly guilty about not having any links back to all my favorite blogs.
