So you know, it’s officially fall. Which means now you’ll be subject to lots of those “pumpkin pancakes/bread/muffins/basically-anything-I-can-put-in-my-mouth” recipes I promised you. Well, yesterday I made these delicious pumpkin muffins from Nicole over on Another One Bites The Crust. DELICIOUS. A perfect way to start off the autumn food extravaganza. (Though technically we started it with Tom’s amazing pasta with pumpkin sauce.) Oh, gosh, I love food way too much.
Ingredients
This recipe is slightly modified and makes 12 muffins
1 1/2 cups flour
3/4 cup brown sugar
2 tsp baking powder
1/2 tsp baking soda
1 tsp nutmeg
1/2 tsp cinnamon
1/2 tsp allspice
1/2 tsp salt
1/3 cup semi-sweet chocolate chips
1/2 cup vanilla soy milk
1/4 cup vegetable oil
1 cup pumpkin puree
1/2 tsp vanilla extract
Directions
Preheat oven to 350. Mix dry ingredients in one bowl (don’t forget to stir so the chocolate chips are distributed) and put your wet ingredients in another. When the oven is ready, quickly add your dry ingredients to your wet ingredients and mix to combine but don’t over stir! Spoon the batter into your muffin pans and bake these suckers for about 20 minutes. Ooooh, yum.

They are so yummy and the best part is that they are vegan. I slightly modified them by using pecans rather than choco chips since I had pecans on hand. I used the almond milk she suggested, but didn’t have pumpkin pie spice, so I used 1/2 tsp of nutmeg, 1/2 tsp cinnamon, and 1/2 tsp of allspice. Soooo good. Yours photographed so much better than mine. Haha. I’m so glad you found these!
