Thanksgiving Cranberry Orange Muffins


Okay, so it’s been a while since I’ve shared some food, and we all know how much I love eating, so here we go! A nice Thanksgiving treat for those who have yet to celebrate.

What You Need

1 1/2 cups dried cranberries
3 tbsp fresh orange juice
2 cups all-purpose flour
1 tbsp baking powder
1/8 tsp salt
1/2 cup superfine sugar
2 tbsp apple cider vinegar
2 tsp baking soda
1 cup almond milk/soy milk/milk
6 tbsp sunflower oil
finely grated rind of 1 orange

What You Do

1. Put the cranberries in a bowl or seal-able bag with the orange juice and set aside to soak. Prepare your muffin pan however you like (with grease or muffin paper liners) and preheat the oven to 400°F/200°C

2. In a medium sized bowl, combine wet ingredients and lightly whisk. In a separate bowl combine the dry ingredients. Slowly add dry to wet while gently stirring. Add the cranberries and orange juice. Stir until everything is just barely combined, DO NOT OVER MIX.

3. Spoon your batter into your muffin pan and bake for 18-20 minutes, until well risen and golden brown, and firm to the touch. (If you insert a tooth pick and it comes out clean, they’re ready.)

    Do you have to use sunflower oil or will something else work? I’ve never bought that before. I’m not against buying it, just curious before I do.

      Oh, sunflower oil is the same as vegetable oil/canola oil/olive oil or whatever oil you normally use.
